FENUGREEK ONION CURRY

Instructions

Heat the oil in a pan, fry the fenugreek seeds, add garlic, onions and curry leaves.

Fry for two minute until the onions turn golden brown.

Add the chopped tomato, roasted chilli powder, water and salt and simmer for five minutes.

When the onions are cooked, add tamarind juice and curry powder.

Simmer for further two minutes.

Remove from fire.
Cooking Options
- - Add more water if more gravy is required. The onion curry tastes better when the gravy is thick.
Serving Suggestions
- - The curry could be served with hard-boiled eggs.
- - OR hard-boiled eggs fried in butter. (Prick the boiled eggs with a fork, season with salt and turmeric powder and lightly fry in two tablespoons butter or oil).
- - Slices of fried omelet could be added to the curry, if preferred.
