EGGPLANT WHITE CURRY

Instructions

    Cut the eggplant into cubes.

    Wash and discard the water (to remove bitterness).

  3. 3

    Place the cubed eggplant in a saucepan with onions, green chilli, curry leaves, cumin seeds, water, salt and oil.

    Cover and cook for two to three minutes.

  5. 5

    Slightly mash the eggplant with a spoon and add the milk.

  6. 6

    Simmer for further thirty seconds and remove from fire.
