DEVILLED STIR FRIED POTATOES
Instructions

Wash and peel the potatoes and cut into cubes.

Boil for four to five minutes in salt and water until cooked.

Strain the cooked potatoes in a colander.

Add lime or lemon juice (and salt if required) and set aside.

Heat the oil in a wok or in a non-stick frying pan.

Add the mustard and cumin seed, sliced onions and curry leaves and fry for a minute until golden brown.

Add chilli flakes (and dry fish flakes for a non-vegetarian option).

Fry for ten seconds.

Finally add the prepared potatoes and mix gently for one minute.

Remove from fire.
Cooking Options
- - Non-vegetarian option includes maldive fish. Ready-made katta sambal could be used instead of dry fish flakes. It is available in Sri Lankan stores in bottles.
- - The katta sambal has chilli, maldive fish, lime and salt. Heat three tablespoons oil and fry the onions until golden brown. Add two to three tablespoons katta sambal and fry for two minutes. Add the cooked potato cubes and mix well.
- - The potatoes cubes can be deep-fried in one cup of oil. Drain on paper towel. Follow the same recipe as above.
