VATTALAPPAN- PALM SUGAR DESSERT

    The juggery (palm sugar) comes in a shape of a half a coconut shell or in cubes.

    It can be found in most Sri Lankan stores.

    Microwave the palm sugar for three to four minutes until the juggery is melted.

    Add the coconut milk and mix well until the juggery is dissolved.

    Beat the eggs in another bowl and add it to the juggery mixture with the cardamom and nutmeg powder.

    Whisk the mixture and strain it through a fine sieve into a baking dish.

    Cover the dish with foil.

    Bake or steam in a moderate oven (~180°C or 350°F).

    Place the dish in a large tray with five cups of water and bake for thirty minutes until the mixture is firm.

    Sprinkle the toasted nuts and place in the warm oven for five minutes.

    The vattalappan could be cooked in the microwave.

    Cook on high for twelve to fifteen minutes.

    A round dish is recommended for making this recipe.

    Do not overcook the vattalappan, as the juice will dry out.
