SRI LANKAN DATE CAKE
Instructions

Mix the soda bicarbonate in warm water and stir well.

Place the chopped dates in a glass bowl and pour the soda bicarbonate water and mix well.

Cover and leave it for one to two hours.

Sift the flour with baking powder at least thrice.

Cream the butter and sugar well.

Beat in the eggs one at a time.

Fold in the date mixture and flour alternatively with a wooden spoon.

Add the chopped cashew nuts and save some to sprinkle on the top.

Finally add vanilla and rose essence.

Line 8 x 8 inch tray with two to three layers of greaseproof paper.

Pour the date cake mixture into the lined tray.

Sprinkle the left over chopped cashew nuts on top.

Bake in a moderate oven (~180°C or 350°F) for an hour.

Place a skewer into the cake to check if it is cooked.

The skewer should come out clean when the cake is done.

Remove from the oven and let it cool well.

Wrap the cake with foil and leave it until required.
