COCONUT ROCK SWEETS

Instructions

    Prepare a 10 x 8 inches flat non-stick tray or butter the bottom of a lamington tray.

    Add the coconut, white sugar and water into a non-stick saucepan and keep stirring for approximately twenty minutes on medium heat.

    Add vanilla essence, food colouring and butter.

    When the coconut rock is ready the sugar on the sides of the pan will start to dry out.

    Turn it on to the prepared tray, spread and flatten evenly with a spatula.

    Make a marking on the coconut rock in equal portions before it starts to set.

  7. 7

    Leave it to set for twenty minutes and cut into pieces along the marked lines.

    Makes up to 16-18 pieces.
