KOTTHU ROTI

Instructions

    Make the godamba rotis as above (recipe: 211A) or purchase the rotis’ from Asian, Sri Lankan or Indian stores.

    It is called roti channai).

    Hold few rotis’ together and cut into strips with a pair of kitchen scissors or a sharp knife.

    Cut the strips into small pieces.

  5. 5

    Heat the oil in a wok and sauté the onions, cabbage, curry leaves and green chillies for one minute until golden brown.

    Add the whisked eggs and scramble it.

    Add the curry mixture and cook for one to two minutes.

    Finally add the shredded roti pieces.

    Mix well and serve hot.

    Add salt if required as roti is salted and the curry is salted.

Cooking Options

  • - Traditional kotthu is made on a flat girdle. The roti is chopped with two trowels like scrapers. The onions and vegetables and eggs are fried on the girdle and the meat curry is added and the rotis’ is chopped with the trowels. The chopping action is called kotthu.
  • - Follow chicken curry for chicken curry or lamb or goat meat curry for lamb or goat meat curry.
