CRUMBED DEEP-FRIED YELLOW CAPSICUMS PEPPERS

    FILLING OF YOUR CHOICE MAY BE USED.

    FOLLOW THE RECIPES: lamb or chicken mince filling fish filling or potato and vegetable filling (recipe: 91A and batter 91B)

    Wash the yellow capsicum chillies.

    Make a slit from the top to half way down of the chilli.

    Remove the seeds (optional), with a small pair of scissors.

    Boil the capsicum chillies in half a cup of water, salt and vinegar in the microwave for one to two minutes or cook on the stove for one minute.

    Drain excess liquid if any.

    Leave it to cool and fill the chillies with a filling of your choice.

    Toss the chillies in corn flour and plain flour mix and place it on a plate.

    Make the batter in a wide or deep bowl.

    Place the breadcrumbs in a flat wide bowl or tray.

    Dip each chilli one at a time and roll in the breadcrumbs to form a perfect chilli holding on to the stem.

    Repeat the process until finished.

    Heat the oil in a wide frying pan or a fryer and lower one at a time gently turning the chillies over so it is cooked evenly until golden brown.

    You may fry more depending on the size of the fryer.

    Do not use a spoon too frequently while chillies are frying, as it may crack.

    Remove and drain on paper towel.

    The stuffed chillies could be dipped in batter and deep-fried if preferred.

    Follow the same procedure for fillings as above.
