BREAD ROLLS (MAALU PAAN & MUSS PAAN)

Dissolve the sugar in lukewarm water, sprinkle the yeast and leave for five minutes for it to prove, until frothy.

Add the flour into a mixing bowl of an electric mixer with milk, water, egg, melted butter or margarine and yeast.

Beat with a dough-hook for two to three minutes.

Mix the dough until it forms into a ball and leaves the sides of the bowl.

Mixing and kneading with your hands is a hard job.

The dough has to be kneaded for ten to fifteen minutes until it forms into soft dough.

Rub oil in a large bowl, place the mixed dough and cover with a damp cloth or cling wrap.

Keep it in a warm place for one to two hours or more until the dough doubles its size.

Place the dough on a floured surface and roll it into a large sausage roll.

Divide dough into six to eight equal portions depending on the size of buns you need (will make 16-20 small buns).

Flatten each portion into a round shape and fill one tablespoon of filling of your choice. For example: lamb or chicken mince , fish filling.

Carefully bring the edges together to form a ball and place it joint side down on a non-stick tray or a buttered tray.

The fish bun is folded in a triangle shape (makes 12 buns).

Place the filling on round shaped dough and fold the two sides from the top.

Next, fold the bottom and the top edge to form a triangle shape.

Leave it to rest for half an hour before baking.

The rolls will rise again.

Brush the rolls with the egg yolk and sugar glaze.

Pre-heat the oven before baking the rolls.

Bake in a moderate oven (~180°C or 350°F) for twenty to twenty five minutes.
