    Clean the prawns (see cooking options below)

    Marinate the prawn with chilli powder, salt, tomato, water and milk and set aside for one or two minutes.

    Heat the oil in a pan and sauté the onions, garlic, curry leaves or parsley for a minute.

    Add the sliced potatoes and fry for another minute.

  5. 5

    Add the marinated prawns, cover and simmer for five to seven minutes.

    Finally add tamarind juice, roasted curry powder and mix well.

    Add half a cup of water or milk if more gravy is required.

    Remove from fire.

Cooking Options

  • - Cleaning the prawns: Remove the head and shell and retain the tail. The digestive cord will come off when removing the head of the prawn. If not make a shallow slit along the length of the prawn to de-vein the digestive cord. Wash well a few times and drain the water.
  • - Potato slices could be deep fried and decorated on top of the prawn curry instead of cooking with the prawns.
