FISH FILLING CURRY FOR PAN ROLLS, BREAD ROLLS
Instructions

Peel and cut the potatoes into small cubes.

Boil the potato cubes in two cups of water with a pinch of salt until soft.

Strain potato cubes in a colander and set aside.

Cut the can of fish and drain the liquid (brine or tomato sauce).

Flake the fish and add roasted chilli powder and salt to taste.

Heat the oil in a pan; sauté the onions, curry leaves or parsley, cinnamon stick (optional) and diced tomatoes.

Add flaked fish and fry for five minutes.

Finally add the curry powder, lime or lemon juice and boiled potato cubes and mix well.

Discard the cinnamon stick after the curry is done.
Serving Suggestions
- - The curry is used as filling for bread rolls, pan rolls, patties and pastries.
- - The curry could be served with cooked rice, roti or string hoppers.
