Deep-fry the vegetable separately.

First the potatoes and eggplant, followed by pumpkin, green beans, chillies or yellow capsicum and onion.

Melt the ghee and oil in a pan and sauté the cut tomato, mint, coriander leaves, pepper corns, yoghurt, black cardamom (optional), green cardamom, cinnamon, ginger, garlic paste, turmeric, cumin powder, coriander powder and rose essence.

Add the fried vegetables and cook on high flame for two minutes.
Cooking Options
- - You can use a commercial biriyani mix: Use half the packet or bottle. Ingredients to be added to the biryani mix are fried vegetables, yoghurt, ginger, garlic paste, coriander, mint leaves and rose essence. Follow biryani made with packet or bottled biryani mix (recipe: 8).
Serving Suggestions
- - Layer this curry with the vegetarian ghee rice alternatively.
Garnishing Options
- - Garnish with cooked green peas.
