QUICK FRIED STRING HOPPERS OR PUTTU WITH EGG

Use left over home made string hoppers or puttu.

Break up the string hoppers or puttu into a bowl.

Sauté the onion, curry leaves and green chilli or capsicum until golden brown.

Add the whisked egg and stir briskly as for scrambled egg.

Add the string hoppers or puttu and mix well.

(Fresh String Hoppers and Puttu can be purchased in Sri Lankan stores).

Vegetarians; can avoid the eggs and fry with vegetables.
Cooking Options
- - For an alternative, you can create a quick string hopper or puttu dish with fruit and nuts. Sauté onions, curry leaves, ¼ cup sultanas and ¼ cup cashew nuts for one minute. Mix the broken string hopper or puttu and mix as above recipe.
