PLAIN MILK RICE

Instructions

    Wash the rice two to three times.

    Add the water, salt and rice in a deep saucepan.

    Cook on a very low fire for twenty five to thirty minutes, stirring occasionally until the rice is soft.

    Add the coconut milk and cook for further three minutes.

  5. 5

    Turn the milk rice onto a flat dish and smooth the top to form the shape of the dish.

    Cut into diamond or square shapes and serve.

Cooking Options

  • - The rice may be cooked in a rice cooker, stirring is not necessary. Cook the rice with water for twenty minutes. Add the warm coconut milk and let it cook until the rice is soft. Remove the lid of the rice cooker after adding the coconut milk or the coconut milk will boil and over flow. Let it cook until the rice cooker switches to warm.

Serving Suggestions

  • - Plain milk rice is served for breakfast.
  • - The milk rice could be served with katta sambal (recipe: 42), lunumiris (recipe: 43) or dried chilli coconut sambal with maldive fish. Ready-made katta sambal is available in Sri Lankan stores. Milk rice may be served with grated palm sugar or bananas.
  • - Approximate ratio for cooking plain rice: 1 cup rice (requires 2 cups of water), 1 cup parboiled rice (requires 3 cups of water), ½ cup uncooked rice serves one person and 1 cup uncooked rice is equal to 3 cups of cooked rice.
