Rice Dishes
GHEE RICE WITH FRIED FRUIT & NUTS
Instructions

Wash the rice and set aside for five to ten minutes.

Soak the saffron threads or powder in two tablespoons water and set aside.

Melt three tablespoons ghee or butter in a frying pan, and fry the onions, cardamoms, cinnamon stick and cloves for a minute until golden brown.

Remove the fried onions and set aside for garnishing.

Add the rice into a saucepan and add the remaining hot ghee or butter, water, stock, salt, ginger and garlic paste, saffron thread or powder mix and cook on slow fire for half an hour until cooked.

Sprinkle the rose essence and remaining saffron thread water.

Fluff the rice with a fork or with the handle of a wooden spoon.

Fry the cashew nuts and sultanas in ghee or butter and garnish the rice with fried onions.
Cooking Options
- - Ghee rice may be cooked in a rice cooker. It will take up to thirty minutes. Ghee rice can also be cooked in a microwave rice boiler on high for fifteen minutes.
- - Ghee rice could be cooked without the any colour.
- - Rice of your choice can be used for the above recipe. Follow instructions on the packaging.
