PORK CURRY

Instructions

    Cut the pork into small pieces, lean and fat together.

    Wash and drain the water.

  3. 3

    Marinate the meat with roasted chilli powder, salt, tomato and milk.

    Heat the oil in a pan.

  5. 5

    Sauté the onions, curry leaves, ginger, lemon grass, rampe and spices for a minute until golden brown.

    Add the meat and fry for a minute.

  7. 7

    Cover and cook on low fire for ten minutes.

  8. 8

    Increase the fire for another five minutes and add the curry powder and tamarind juice or goraka water and mix well.

Serving Suggestions

  • - Fresh rampe (pandan leaves) and lemon grass is available in most Asian Asian stores and fresh dried rampe is available in Sri Lankan stores.
