PORK CURRY
Instructions

Cut the pork into small pieces, lean and fat together.

Wash and drain the water.

Marinate the meat with roasted chilli powder, salt, tomato and milk.

Heat the oil in a pan.

Sauté the onions, curry leaves, ginger, lemon grass, rampe and spices for a minute until golden brown.

Add the meat and fry for a minute.

Cover and cook on low fire for ten minutes.

Increase the fire for another five minutes and add the curry powder and tamarind juice or goraka water and mix well.

- - Fresh rampe (pandan leaves) and lemon grass is available in most Asian Asian stores and fresh dried rampe is available in Sri Lankan stores.
