LAMB OR CHICKEN MINCED CURRY

    Wash the chicken or lamb mince (optional), and let it drain in a colander.

    Add roasted chilli powder, salt and vinegar to the mince and mix well.

    Heat the oil in a saucepan.

  4. 4

    Sauté onions for a minute until golden brown.

  5. 5

    Add the marinated mince, diced tomatoes, cinnamon stick, diced potatoes and chopped curry leaves or parsley.

    Fry for five seconds and add the water.

  7. 7

    Let it simmer on low fire for five minutes until the potatoes cooked.

    Increase the fire and cook for two minutes until all the gravy evaporates.

    Finally add curry powder, lime or lemon juice and mix well.

    Discard the cinnamon stick after the curry is done.

Cooking Options

  • - Potatoes and be cooked and separately and added to the mince curry.

Serving Suggestions

  • - The curry is a filling for bread rolls, pan rolls and pastries.
  • - The curry could be served with cooked rice, roti or string hoppers.
