DEEP FRIED CHICKEN

    Remove skin and wash the chicken.

    Cut into large pieces.

    Marinate the pieces with roasted chilli powder, salt and tamarind juice.

    Heat oil in a wok and deep-fry a few chicken pieces at a time for four to five minutes (depending on the size of the pieces).

    Remove the fried chicken and drain on a paper towel and set a side.

Cooking Options

  • - Any meat could be used instead of chicken. Cut meat into large pieces and beat it with a meat tenderiser.

Serving Suggestions

  • - Make a salad with 2 red onions (sliced fine), 1-2 tomatoes (sliced fine), 2 sprigs parsley (chopped), 1 tablespoons lime or lemon juice (or vinegar), and 1 teaspoon salt or to taste and ½ teaspoon pepper powder. Arrange the chicken or meat pieces on a salad dish, place onion salad on top.
  • - The fried chicken could be served with fried or boiled potatoes and garnish with lettuce and coriander leaves.
