CHICKEN DRY CURRY (PAAL PORIYAL)

    Wash and cut chicken into small cubes.

    A whole chicken may be cut into very small pieces if preferred.

    Add salt, chilli powder, tomato and milk to the chicken pieces and mix well.

    Heat the oil in a saucepan and sauté chopped onions, curry leaves and capsicum or green chillies for a minute until golden brown.

    Add the chicken, cover and cook on low flame for ten to twelve minutes.

    Increase the fire for five minutes and add curry powder and lime or lemon juice.

  7. 7

    Keep stirring until the gravy is fully absorbed and curry turns dry and oily.

Cooking Options

  • - Add the shallots or spring onions and the deep fried potatoes to the dry curry.
  • - The chicken could be cooked with regular milk, but coconut milk gives a better flavor.
