CHICKEN CURRY

    Remove the skin and wash the chicken.

    Cut the chicken to small pieces.

    Marinate the chicken pieces with roasted chilli powder, salt, tomato and milk or water.

    Heat the oil in a saucepan.

    Sauté the onions, rampe, and curry leaves for a minute until golden brown.

    Add the marinated chicken and fry for one minute.

    Cover and cook on low fire for ten to twelve minutes.

    Increase the fire and cook for five minutes.

    Finally add curry powder and lime or lemon juice and mix well.

    Remove from fire.

Cooking Options

  • - Some like adding potatoes to the chicken curry to make the gravy thick. The potatoes could be added while sautéing the onions to seal the outer layer. It prevents the potato pieces from getting soft.
  • - The gravy will thicken when curry powder is added.
  • - The chicken could be cooked with only water if preferred.
