Boil the water and pour into a pan, add salt and cool for a minute.

Place the rice flour in a large bowl and add the hot water a little at a time and mix the flour.

Use a pastry mixer or a food processor to mix the flour.

Puttu mix should look like pastry crumbs with little balls.

Place the metal plate with holes in the puttu mold and fill the mold with shredded coconut and puttu crumbs alternatively.

Fill the water in the steamer pot and bring it to a boil.

Place the filled mold on top of the steamer pot (see photo).

Steam for three to four minutes until the steam comes through the top of the lid.

If you do not have a puttu steamer, steam in a regular steamer set or in a rice cooker with one cup of water and steaming plate.

Puttu can be steamed in the microwave in a dish with shredded coconut.

Cook on high for five to six minutes.

Roasted rice flour or steamed wheat flour is available in Sri Lankan stores.
