Soak the rice, urid dhal and fenugreek seeds together for five to six hours in water.

Wash and drain the water.

Grind the soaked rice and urid dhal with water to a smooth thick paste.

Leave it in a warm place to ferment for five to six hours.

Add salt and mix before ready to steam.

Spray oil in the idly mold and pour two tablespoons of mixture, depending on the size of the mold (the mold looks like an egg poacher).

Boil the water in the idly steamer pan and place the molds with idly mixture.

Cover and cook for five minutes.

Remove the cooked idlies from off the mold by lifting with a spatula or butter knife.

Wash and dry the mold and repeat the process until finished.
Serving Suggestions
- - Serve with Sambar, , or dried chilli coconut chutney.
